    List of Ingredients




    1 lb. gr. turkey
    1/2 c. dry breadcrumbs
    2 T. parmesan cheese
    1/2 t. Italian seasoning
    1/2 t. salt
    1/8 t. pepper
    1 T. olive oil
    1 large onion, chopped
    1/2 c. shredded carrots
    3 cloves garlic, chopped
    6 c. chix broth
    1/4 t. pepper
    1 lb. escarole, cleaned, cut into 1/2 inch strips
    1/4 c. parmesean cheese

    Recipe



    In a bowl, mix first 6 ingredients. Shape into 1 inch meatballs (50) and set aside. In saucepan, heat oil. Add onion, carrots and garlic and saute for 3 minutes. Add broth and pepper and bring to a boil. Add meatballs; simmer for 2 minutes. Add escarole and simmer, covered, for 10 minutes. Remove from heat and add parm. chs.
