    Lemon Dill Chix and Rice Soup

    List of Ingredients




    3 c. chix. broth
    3 chix breasts, chopped
    5 cloves garlic, minced
    1/2 t. salt
    3/4 C. long grain rice
    3/4 C. diced leek or onion
    4 carrots thinly sliced
    3 C. frozen lima beans, or cut green beans
    1 T. fresh lemon juice
    1/4 C. chopped fresh dill, or 1 t. dried

    Recipe



    In large saucepan, combine broth, 4 C. water, chix, garlic and salt. Bring to boil over high heat, reduce to simmer, cover, cook until chix is cooked through, about 15 minutes. Return to boil and add rice and leek, reduce to a simmer, cover and cook 10 minutes. Add carrots, lima beans, and lemon juice and cook, uncovered, for 3-6 minutes or until rice is tender. Stir in the dill and serve.
