    List of Ingredients




    1 lb. lean boneless pork loin
    2 C. water
    2 14 1/2 oz. cans chix. broth
    1 14 1/2 oz. can mexican style stewed tomatoes
    1 14 1/2 oz or 16 oz can golden or white hominy or whole-kernnel corn, drained
    1 4-oz. can diced green chilies
    1 - 2 T. chili powder
    1/2 t. cumin
    3 C. crushed tortilla chips
    1 C. grated jack cheese

    Recipe



    Cut pork into bite-sized strips about 2 inches long and 1/2 inch wide; set aside. In a dutch oven combine water, chix. broth, and tomatoes. Bring to boil. Add pork and reduce heat. Simmer, covered for 5 minutes. Add hominy or corn, chilis, chili powder and cumin. Simmer, covered for 10 more minutes. To serve, divide tortilla chips among 6 bowls. Ladle soup over chips. Sprinkle with cheese.
