Fresh Corn Frittata & Smoked Mozzarella

Cooking spray
1 1/2 c fresh corn kernels
1/4 c grated smoked mozzarella cheese, divided
1 T chopped fresh basil
1/4 t salt
1/4 t pepper
5 large egg whites, lightly beaten
2 large eggs, lightly beatenRecipe
Preheat broiler. Heat a medium nonstick skillet over high heat, coated with cooking spray. Add corn and saute 5 minutes. Combine corn, 2 T cheese, basil and the remaining ingredients in a large bowl, stirring with a whisk. Add mixture back to pan and cook, covered, over medium heat, 5 minutes or until almost set. Sprinkle with 2 T cheese. Place pan under broiler for 5 minutes or until set and browned.
