Peach Chocolate Cups

List of Ingredients
10 ounces dark chocolate, melted
6 peaches, peeled, seeded and roughly chopped
Juice of 1 large line
2/3 cup plain yogurt
1 tsp gelatin
2 teaspoons cold water
4 mint springs, to garnish
Recipe
1. Lightly brush four 4-inch individual tart tins with oil. Spoon 3 tablespoons melted chocolate into bottom of each. Using a pastry brush, spread chocolate evenly around the base and sides of tin.
2. Allow to set in refrigerator. Brush with extra chocolate if the cases are too thin. When sold, lift from tins carefully so as not to break edges.
3. Puree peaches, lime juice and yogurt in a food processor. Soften gelatin in cold water. Stir over bowl of hot water until dissolved. Whisk into peach mixture.
5. Spoon into individual chocolate cases. Chill for at least 2 hours before serving. Garnish with mint leaves.
