    Interesting. I don't think many food section readers were very familiar with papaya 35 years ago.


    List of Ingredients


    • 2 firm-ripe papayas
    • 4 tbsps. butter or margarine
    • 2 tbsps. lime juice
    • 2 tbsps. grated fresh, or 1 teaspoon ground, ginger
    • 1/4 tsp. salt
    • Dash of cayenne


    Instructions


    1. Peel and cut papayas in half or three sections lengthwise; scoop out seeds.
    2. Arrange in greased baking pan. Brush cut tops with a little melted butter; mix remainder with lime juice, ginger and salt. Spoon into cavity of each papaya.
    3. Sprinkle lightly with a dash of cayenne after baking. Serve hot.
    4. Makes 4-6 serving. Especially good with chicken, lamb or pork.
