    Recipe Introduction


    This recipe is so good and easy that I actually made it so often for a while that I finally got tired of it. Time to start making it again, but not too often.


    List of Ingredients


    • 1/2 lb. smoked sausage or kielbasa
    • 1 cup white rice
    • 1 can (14.5-oz.) stewed tomatoes
    • 1 cup water
    • 2/3 cup thick and chunky salsa or picante sauce
    • 1 can (8 oz.) dark red kidney beans, rinsed and drained


    Instructions


    1. Cut sausage into half lengthwise; cut crosswise into 1/4 inch slices.
    2. In 10-inch skillet, combine rice, sausage and remaining ingredients. Mix well, breaking up tomatoes with large spoon. Bring to boil. Reduce heat, cover and simmer for 20 minutes. Remove from heat; let stand covered 5 minutes/


    Final Comments


    I usually use a regualr size can of beans and freeze the other half (with the juice) for use in chili or the next time I make this recipe.
