    Tried and True. Served at Easter.


    List of Ingredients


    • 1 box (8-serving size) lemon flavor gelatin
    • 1-1/2 cups boiling water
    • 1 can (17-1/4 oz.) pineapple tidbits, packed in juice
    • 2 cans (11 oz. each) mandarin oranges, drained
    • 3 cups minature marshmallows
    • 1 cup sweetened flaked coconut


    Instructions


    1. Place gelatin in a large metal bowl. Add boiling water and stir until dissolved.
    2. Drain pineapple. Add enough cold water to juice to make 1-3/4 cups. Add to gelatin.
    3. Chill until mixture is as thick as unbeaten egg whites. Fold in remaining ingredients. Pour into 10 to 12 cup pan or mold.
    4. Refrigerate at least 4 hours until very firm or up to 3 days. (Check mold after 20 to 30 minutes. If marshmallows are concentrated on top, gently push down and stir in with rubber spatula.)
