Red or Yulon Gold Potato's (2lbs)
Roasted Garlic (1 head)
Milk or half&half (1/2 to 3/4 cup)
Butter (1/2 stick)
Light sour cream (1/3 cup)
Parmensan Cheese (1/4 cup or so)
Salt
Pepper Recipe
Boil potatos in heavily salted water until tender. Use a ricer to mash the potato rather than a mixer (more air). In a saucepan heat milk, garlic, butter and sourcream until the sourcream is disolved. Stir in the parm cheese until melted.
Stir into the riced potatos and bake at 350 for 1/2 hr.
These can be mixed up , chilled and then reheated in the oven.
