List of Ingredients 1 tsp. olive oil 2 tsp. grated gingerroot 1 clove garlic 1 1/2 cups uncooked white rice 3/4 cup coconut milk 1 tsp. each honey and grated lemon zest 1/2 tsp. salt ( if desired) Instructions Heat oil in a medium non-stick saucepan. Add gingerroot and garlic and saute 1 minute. Add rice and coconut milk, 2 1/4 cups of water, the honey and lemon zest and salt. Bring to a boil. Reduce heat to medium low. Cover and simmer for about 20 minutes. Fluff with a fork and serve. Final Comments Add chicken or shrimp to the finished product if you want a light lunch or dinner. Would be great served along side a salad.
