    Pastel Mint Refrigerated Dessert

    My mother found this recipe in the newspaper when I was young. I liked it so much that I would request this for my birthday, instead of cake!


    List of Ingredients


    • 32 Hydrox or Oreo cookies
    • 1 pint whipping cream
    • 1 c. pastel pillow mints
    • 2 c. pastel miniature marshmallows


    Instructions


    1. Crush 16 cookies and put on bottom of 9" x 13" pan.
    2. Whip cream.
    3. Fold in mints and marshmallows.
    4. Spread over bottom layer.
    5. Crush remaining 16 cookies and sprinkle on top.
    6. Cover.
    7. Refrigerate 2 (yes 2-it really makes a difference!) days before serving.


    Final Comments


    This is a colorful, refreshing dessert,and would be good at a baby or bridal shower.
