Butterscotch Cheesecake Bars

1 (12 oz.) pkg. butterscotch chips
1/3 c. unsalted butter
2 c. graham cracker crumbs
1 c. chopped pecans (optional)
1 (8 oz.) pkg. cream cheese, softened
1 (14 oz.) can sweetened condensed milk
1 egg
1 t. vanilla extract Recipe
Preheat oven to 350°. Lightly grease a 9x13 baking dish; set aside. In a medium saucepan, melt butterscotch chips and butter over low heat. Stir in graham cracker crumbs and pecans. Press half of crumb mixture onto the bottom of prepared baking dish. In a large mixing bowl, beat cream cheese until fluffy. Add sweetened condesned milk, egg and vanilla; mix well. Pour mixture into prepared pan. Sprinkle with remaning crumb mixture. Bake for 30 minutes, or until a toothpick inserted in the center comes out clean. Cool to room temperature. Chill completely before cutting into bars. Refrigerate any leftovers.
