Cherry Cheese Bars

List of Ingredients
- 1-1/4 c. flour
- 1/2 c. brown sugar
- 1/2 c. shortening
- 1 c. chopped pecans, divided
- 1/2 c. coconut
- 1 (8 oz.) pkg. cream cheese
- 1/3 c. sugar
- 1 egg
- 1 t. vanilla
- 1 can cherry pie filling
Instructions
- Preheat oven to 350 degrees. Grease a 9x13 pan.
- Combine flour and brown sugar; cut in shortening until in fine crumbs. Add 1/2 c. pecans and coconut. Mix well.
- Remove 1/2 cup of this mixture and set aside.
- Press remaining crumbs in bottom of greased 9x13 pan. Bake for 12-15 minutes.
- Beat cream cheese, sugar, egg and vanilla until smooth. Spread over hot baked crust. Return to oven. Bake 10 minutes.
- Spread cherry pie filling over the cheese layer. Combine 1/2 c. pecans with reserve crumbs. Sprinkle over the cherries. Return to oven and bake 15 minutes longer.
- Cool. Makes 24 bars.
