Rocky Road Fudgy Brownies

- 1 c. butter
- 4 squares (1 oz. ea.) unsweetened chocolate
- 2 c. sugar
- 1� c. flour
- 4 eggs
- 2 t. vanilla
- � c. salted peanuts, chopped
- FROSTING:
- � c. butter
- 1 (3 oz.) pkg cream cheese
- 1 square ( 1 oz.) unsweetened chocolate
- � c. milk
- 2-3/4 c. powdered sugar
- 1 t. vanilla
- 2 c. mini marshmallows
- 1 c. salted peanuts
Instructions
- Heat oven to 350 degrees.
- For brownies, in 3 quart saucepan combine butter and chocolate. Cook over medium heat, stirring constantly, until melted, 5 to 7 minutes.
- Stir in sugar, flour, eggs and vanilla until well mixed. Stir in chopped peanuts. Spread into greased 9x13 baking pan. Bake for 20-25 minutes or until brownies start to pull away from sides of pan.
- For frosting, in 2 quart saucepan combine butter, cream cheese, chocolate and milk. Cook over medium heat, stirring occasionally, until melted, 6 to 8 minutes.
- Remove from heat; stir in powdered sugar and vanilla until smooth. Stir in marshmallows and peanuts. Immediately spread over hot brownies. Cool completely; cut into bars.
- Store in refrigerator.
- Makes 4 dozen.
