    Rocky Road Fudgy Brownies

    List of Ingredients


    • 1 c. butter
    • 4 squares (1 oz. ea.) unsweetened chocolate
    • 2 c. sugar
    • 1½ c. flour
    • 4 eggs
    • 2 t. vanilla
    • ½ c. salted peanuts, chopped
    • FROSTING:
    • ¼ c. butter
    • 1 (3 oz.) pkg cream cheese
    • 1 square ( 1 oz.) unsweetened chocolate
    • ¼ c. milk
    • 2-3/4 c. powdered sugar
    • 1 t. vanilla
    • 2 c. mini marshmallows
    • 1 c. salted peanuts


    Instructions


    1. Heat oven to 350 degrees.
    2. For brownies, in 3 quart saucepan combine butter and chocolate. Cook over medium heat, stirring constantly, until melted, 5 to 7 minutes.
    3. Stir in sugar, flour, eggs and vanilla until well mixed. Stir in chopped peanuts. Spread into greased 9x13 baking pan. Bake for 20-25 minutes or until brownies start to pull away from sides of pan.
    4. For frosting, in 2 quart saucepan combine butter, cream cheese, chocolate and milk. Cook over medium heat, stirring occasionally, until melted, 6 to 8 minutes.
    5. Remove from heat; stir in powdered sugar and vanilla until smooth. Stir in marshmallows and peanuts. Immediately spread over hot brownies. Cool completely; cut into bars.
    6. Store in refrigerator.
    7. Makes 4 dozen.
