Beef Fajitas

- 1 (16 oz.) jar chunky salsa
- 1/4 c. oil, divided
- 2 T. fresh cilantro, chopped
- 1 T. chili powder
- 2 cloves garlic, minced
- 1/2 t. ground cumin
- 1/2 t. salt
- 1 lb. sirloin steak, cut into thin strips
- 1 c. red bell pepper strips
- 1 c. green bell pepper strips
- 1 c. sliced onion
- flour tortillas
- shredded lettuce
- shredded cheese
- sour cream
Instructions
- In a medium bowl, combine the salsa, 2 tablespoons of oil, cilantro, chili powder, garlic, cumin and salt. Mix together well, stir in the beef strips, cover and marinate in the refrigerator for at least 1 hour.
- After the meat has marinated, heat the remaining oil in a large skillet over medium high heat. Place red bell pepper, green bell pepper and onion in the oil and saute for 5 to 6 minutes, or until the onion is slightly golden and the peppers are tender.
- Stir in the beef mixture and saute for 7 to 8 more minutes, or until the meat is no longer pink. Serve in warmed tortillas. Lettuce, cheese and sour cream can be added if desired.
