    My Mom made these all the time when I was growing up. I like serving them with creamy scalloped potatoes. The reason these are called porcupine meatballs is because when the meatballs cook down, the rice sticks out of them and they look like porcupines

    List of Ingredients




    2 pounds ground beef
    2/3 cup long-grain rice, uncooked
    1/2 cup water
    1/4 cup finely chopped onion
    1 teaspoon seasoned salt
    1/4 teaspoon garlic powder
    1/4 teaspoon pepper
    1 (15 oz.) can tomato sauce
    1 cup water
    2 teaspoons Worcestershire sauce

    Recipe



    Preheat oven to 350° degrees F.

    Mix ground beef with rice, ½ cup water, onion, seasoned salt, garlic powder and pepper. Shape ground beef mixture into 1-1/2 inch balls and place into an ungreased baking dish.

    In a bowl, mix together the tomato sauce, 1 cup water and Worcestershire sauce; pour over the meatballs.

    Cover and bake in oven for about 45 minutes. Uncover and bake an additional 15-20 minutes longer.
