Banana Bread

List of Ingredients
- 2 c. flour
- 1 t. baking soda
- 1/2 t. salt
- 1/2 c. shortening
- 1 t. vanilla
- 1 c. sugar
- 2 eggs
- 3 med. bananas
- 1/4 c. chopped nuts, optional
Instructions
- Preheat oven to 325 degrees.
- Sift together flour, baking soda and salt; set aside.
- Blend together shortening and vanilla. Gradually add sugar, creaming until light and fluffy. Add eggs, one at a time beating well after each addition. Mash bananas; add alternately with the dry ingredients. Add nuts, if desired. Pour into greased loaf pan.
- Bake at 325 degrees for 1 hour and 15 minutes. If using mini loaf pans bake for 40-45 minutes.
