    Irish Soda Bread

    Recipe Introduction

    This is Mrs. McNulty's recipe. She makes it with dark raisins only. Mrs. McNulty makes this bread at least twice a week for her family and makesextra loaves for every birthday, holiday, etc. She has won prizes for this recipe.

    List of Ingredients

    3 c. flour
    1/8 t. cream of tartar
    2/3 c. sugar
    1 c. raisins and/or craisins
    1 t. baking soda
    1 T. baking powder
    1/2 t. salt
    2 eggs
    1-2/3 c. buttermilk
    2 T. melted butter

    Recipe

    Mix together all dry ingredients. Add raisins (and/or craisins). In a separate bowl beat the eggs, add buttermilk and melted butter. Mix wet ingredients into dry ingredients by spoon just until liquid is incorported into the dry ingredients. Grease a bread loaf pan and pour in batter. Bake in 350° oven for 1 hour.

    Halfyway through baking, gently rub the top of the bread evenly with butter or margarine. This will give you a nice soft buttery crust.
