Recipe Introduction
This recipe caught my eye when I was looking for gluten free things to bake for Hendrix. It’s basically a Peanut Butter Banana Bread with chocolate chips. Very good!
List of Ingredients
1-3/4 cups Gluten Free all-purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/3 cup butter, softened
3/4 cup crunchy peanut butter
2/3 cup sugar
2 eggs, slightly beaten
1 cup mashed Ripe Banana
1 cup mini chocolate chips
Recipe
Preheat the oven to 350° degrees F.
Mix the flour, baking powder, salt, and soda together. Add in the softened butter, peanut butter, and sugar mixing well. Add in the beaten eggs and mashed banana. Fold in the chocolate chips. Spoon batter into 2-3 greased mini loaf pans.
Bake on 350° for approximately 45 minutes or until poked with a toothpick in the center and it comes out clean.
