    Chocolate Zucchini Cake

    List of Ingredients


    • 1/2 c. vegetable oil
    • 1/2 c. butter
    • 1-3/4 c. sugar
    • 2 eggs
    • 1 t. vanilla
    • 1/2 c. buttermilk
    • 2-1/2 c. flour
    • 4 T. cocoa
    • 1 t. baking soda
    • 1/2 t. cinnamon
    • 1/2 t. salt
    • 2 c. grated zucchini
    • 1/2 c. chopped nuts
    • 1/2 c. chocolate chips


    Instructions


    1. In large mixing bowl, combine oil, butter, sugar, eggs and vanilla. Add buttermilk and sifted dry ingredients. Mix until smooth. Stir in grated zucchini. Pour into a greased and floured 9x13 pan. Sprinkle top with nuts and chocolate chips. Bake at 350° for 35-40 minutes.
