Mini Cheesecakes - Low Carb

List of Ingredients
- 3 (8 oz.) pkgs. cream cheese, softened
- 3 eggs
- 2 t. vanilla
- 1 t. lemon juice
- TOPPING:
- 1 c. sour cream, room temperature
- 2 packets Splenda
- 1 t. vanilla
Instructions
- Preheat oven to 350 degrees.
- Beat all ingredients until creamy. Pour into muffin papers, filling to 3/4 full. Bake for 15-18 minutes at 350 degrees.
- TOPPING:
Mix all topping ingredients together. Put one teaspoonful on top of each mini cheesecake. Spread around to cover entire cheesecake. Place back in oven for an additional 3-5 minutes.
