Red Velvet Cake

- 1 1/2 c. sugar
- 1/2 c. shortening
- 2 c. sifted flour
- 3 T. cocoa
- 1 t. salt
- 1 (1 oz.) bottle red food coloring
- 1 c. buttermilk
- 2 eggs
- 1 t. vanilla
- 1 T. vinegar
- 1 t. baking soda
- FROSTING:
- 3 T. flour
- 1 c. milk
- 1 c. margarine
- 1 c. sugar
- 1 t. vanilla
Instructions
- Combine sugar and shortening, then add flour, cocoa, salt, food coloring and 3/4 c. buttermilk. Beat. Add eggs, 1/4 c. buttermilk and vanilla; beat 1 minute. Mix together vinegar and baking soda. Stir into batter by hand. Pour into 2 - 9" greased and floured cake pans. Bake at 350 degrees for 30 minutes.
- FROSTING: Cook flour and milk until thick, let cool. Cream together margarine and sugar. Add vanilla. Beat the two mixtures together until the consistency is that of whipped cream. Spread on cooled cake.
