Pat's Hamburger Casserole

- 5 potatoes, sliced
- 1-1/2 lean ground beef
- 1 green pepper, chopped
- 1 onion, chopped
- salt
- pepper
- 1 (11.5 oz.) can tomato juice
- 1 c. shredded cheese
Instructions
- Preheat oven to 350 degrees.
- Slice potatoes and put half of them in bottom of casserole dish. Sprinkle a little salt and pepper on potatoes. Put half of the raw hamburger on top of potatoes. Sprinkle with a little salt and pepper. Put half of green pepper and onion on top of hamburger. Repeat layers.
- Pour tomato juice over the top and bake at 350 degrees for about 1 hour & 45 minutes, until potatoes are done and juice cooks down. You might have to turn the oven down the last half hour. Top with cheese and return to the oven for 15 minutes.
