Peanut Butter Cookies

List of Ingredients
- 1-1/4 c. flour
- 3/4 t. baking soda
- 1/2 t. baking powder
- 1/2 t. salt
- 1/4 c. shortening
- 1/4 c. butter
- 1/2 c. sugar
- 1/2 c. brown sugar
- 1 egg
- 1/2 t. vanilla
- 1/2 c. crunchy peanut butter
Instructions
- Preheat oven to 350 degrees
- In bowl mix flour, baking soda, baking powder, and salt. Set aside.
- In another bowl, beat shortening, butter and sugars until smooth. Beat in egg, vanilla and peanut butter. Work in dry ingredients until dough is well mixed.
- Divide dough in half, wrap in plastic wrap and chill several hours or over night.
- Roll dough into 1 inch balls and place 3 inches apart on greased cookie sheet. Flatten by scoring tops with a crisscross pattern with the tines of a fork, dipping fork in water each time to prevent sticking to dough.
- Bake cookies at 350 degrees for 10 minutes.
Makes 3 dozen.
