Pumpkin Cookies

List of Ingredients
- 2 c. sugar
- 2 c. shortening
- 1 (16 oz.) can pumpkin
- 2 eggs
- 2 t. vanilla
- 4 c. flour
- 2 t. baking powder
- 1 t. baking soda
- 1 t. salt
- 1 t. nutmeg
- 1-1/2 t. allspice
- 2 t. cinnamon
- 1 c. chopped nuts, if desired
Instructions
- Preheat oven to 350 degrees.
- Cream sugar and shortening; add pumpkin, eggs and vanilla.
- Sift together flour, baking powder, baking soda, salt and spices. Add to pumpkin mixture; stir in nuts.
- Drop by tablespoon on a greased cookie sheet. Bake at 350 degrees for 10-12 minutes.
- Frost with vanilla frosting.
Makes 5 dozen.
