Pecan Pie

- 3 eggs, slightly beaten
- 1 c. light-color corn syrup
- 2/3 c. sugar
- 1/3 c. butter, melted
- 1 t. vanilla
- 1¼ c. chopped pecans
- 1 (9 in.) unbaked pie crust
Instructions
- Preheat oven to 350°.
- In a large bowl, combine eggs, corn syrup, sugar, butter and vanilla. Stir in pecans.
- Pour filling into unbaked pie crust. To prevent over-browning, cover edge of pie with foil. Bake 25 minutes. Remove foil. Bake 20-25 minutes more or until filling is puffed and appears set.
- Cool on a wire rack. Cover and chill within 2 hours. Store in the refrigerator.
