- 4 chicken breasts
- olive oil
- 1 zucchini, sliced
- 1 green pepper, sliced
- 1 red pepper, sliced
- 1 onion, sliced
- Cajun seasoning
- Mozzarella cheese
Instructions
- Preheat oven to 350 degrees.
- In a large skillet, brown chicken in olive oil. Add Cajun seasoning to taste, while chicken is still raw. Cook until juices run clear. Remove chicken and place in a casserole dish.
- In the same skillet saute the vegetables with a little more olive oil. Add Cajun seasoning to taste. When done, place in casserole dish on top of chicken. Top with shredded cheese and bake for 10 minutes until cheese is melted.
