Seared Pork Tortas

List of Ingredients
2 tsp. olive oil
1 tsp. ground cumin or taco seasoning
1/4 tsp. salt
6 boneless pork loin chops (1/4 in. thick)
1 (12 oz.) baguette, cut in half horizontally
1/2 c. refried beans
2 T. fresh salsa
1/2 c. shredded Monterey Jack cheese
1/4 c. thinly sliced onion
1 thinly sliced tomato
1 jalapeno pepper, seeded & thinly sliced
1/2 ripe peeled avocado, thinly sliced
Recipe
Preheat broiler.
Heat oil in large nonstick skillet over medium-high heat. Combine cumin or taco seasoning and salt; sprinkle evenly over pork. Add pork to pan; cook 2 minutes on each side or until done. Let stand 5 minutes; cut into thin slices.
Hollow out top and bottom halves of bread, leaving 3/4 inch thick shell. Place bread halves, cut sides up, on a baking sheet. Broil until golden brown.
Place beans and salsa in a small bowl and mix together. Spoon bean mixture into the bottom half of baguette. Top with pork, cheese, onion, tomato, jalapeno, avacado and top half of baguette. Cut into 4 pieces.
