    Brilliant Sauteed Broccoli

    If you want restaurant-quality broccoli, this is the recipe! Blanching the broccoli first keeps its color brilliant.

    List of Ingredients




    1 pound broccoli florets
    2 tablespoons olive oil
    1/4 teaspoon red pepper flakes
    1/2 teaspoon kosher salt
    1/8 teaspoon freshly ground black pepper
    1/3 cup finely grated parmesan cheese

    Recipe



    Bring a pot of salted water to a boil. Fill a large bowl with ice and cold water. Put broccoli in boiling water (with a handled strainer, if you have one) and cook until bright green, 1 to 2 minutes. Quickly drain and transfer to ice water, immersing broccoli completely for 1 to 2 minutes to stop cooking. Drain broccoli well and spread out on paper towels to absorb excess moisture. [This step can be done up to 2 days ahead.]

    Heat oil in a large skillet over medium-high heat. Add pepper flakes and cook 1 minute. Add broccoli,
    salt, and black pepper, and cook, stirring until broccoli is heated through, about 3 minutes. Toss with cheese and serve.
