    Aunt Bea was the Queen of cooking for cheap. She perfected this recipe over the years. Our entire family would basically line up when she made these little treasures. The best was when she'd invite you for dinner and you could really have your fill.

    List of Ingredients

    1 can Corned Beef
    1 can Tomatoes (large can whatever is on sale)
    1 small Onion chopped
    Roux Flour/butter mixed together for thickening
    Pie pastry - you choose the shape (traditionally in a muffin tin with a pastry lid). You could also just cut out circles and make a patty in a half circle.

    I've made them using cheap white bread cut into circles, lightly buttered/oiled and squished into muffin tins. Bake until lightly browned in 350 oven.

    Recipe

    Put tomatoes into a pot (cut up if whole); add corned beef and break it down; add onion. Cook all until onion is tender. Start scooping in the roux until you reach the desired consistency.

    When the corned beef has thickened to the desired level, fill pastry shells.

    Bake until golden brown - enjoy

    These reheat and freeze beautifully (if there are any left)
