    Jam Thumbprints Cookies

    Source of Recipe

    Esther Roy

    Recipe Introduction

Mum (Eunice Wilson) loved to make these for the kids, who loved to make indents with their thumbs before baking. Cookies were made on the weekend and whichever kid was home got to press with his thumb. That kid got 5 cookies for himself when freshly baked! Perry and later Pat were usually the recipients of this treat

    List of Ingredients

    2/3 C Butter/Margarine
    1/3 C granulated sugar
    2 Egg Yolks
    1 tsp. vanilla
    1/2 tsp. salt
    1-1/2 C sifted all-purpose flour
    2 egg whites
    3/4 Cup finely chopped walnuts
strawberry preserves/currant jelly or jam of your choice.

    Recipe

Cream together margarine and sugar until fluffy. Add egg yolks, vanilla and salt. Beat well. Gradually add sifted flour, mixing well. Shape dough into ¾' balls: Dib in slightly beaten egg whites. Roll in chopped walnuts and place balls about 1" apart on a greased

Cookie sheet. Press down center of each with thumb (let kids do it).

Bake cookies at 350 till done - about 15-17 minutes. Cool slightly before removing from sheet - and cool further on rack. Just before serving, fill centers with preserves. Makes about three dozen.
