Pound cake (cut into ½” thick slices)
Seedless Raspberry Jam*
½ C semi-sweet chocolate chips
1 1/2 C chocolate frosting (divided, saving 1 C for the coating)
1 tsp Crisco shortening
1 Tbls Chambord (raspberry liquor, OPTIONAL)
Recipe
Spread a thin layer of the jam on ½ the slices, and a thin layer of the chocolate frosting on the other ½ - then place them together (sandwich style).
Cut the “sandwiches” either:
* Diagonally, then diagonally again, making 4 triangles - OR
* Two cuts (making 3 “fingers”) – OR
* Two cuts vertically, then two cuts horizontally (making 9 small squares)
In a small saucepan, over a water bath, melt the chocolate chips and the Crisco … when smooth, add the remaining 1 C chocolate frosting and the liquor (if using).
If you have a candy making tool, great – if not … Use a fork (the long handled/2 tine work best)
Spear the pound cake “sandwich and hold it over the pan of chocolate … spoon frosting over it to cover the top and sides. … If you keep the icing over the water bath it’s a lot easier to handle, if not, just re-heat as necessary.
Place the pieces on a wire rack (place a tray under it for easy clean-up) Let stand until icing sets (about 30 minutes)
You can leave out the shortening in the icing, but I like the “shine” it gives the chocolate.
* You can substitute any flavor of jam / preserves and an accompanying liquor to your taste .. (I love it with orange marmalade)
