    Ingredients:
    • 12 in prepared cooked pizza base
    • 1 tsp almond or light olive oil

    For The Topping:
    • 2 oz Amaretti biscuits, crushed
    • 2 oz caster sugar
    • 1½ oz Californian toasted chopped Almonds
    • 1½ oz rolled oats
    • ½ tsp ground cinnamon
    • 2 oz unsalted butter, melted
    • 1 large egg, beaten
    • 4 oz ricotta cheese, creamed
    • 14½ oz can peach slices, drained and cut in half

    For the Sweet Mascarpone Cream:
    • 4 oz mascarpone
    • 1½ fl oz whipping cream
    • 1 oz icing sugar, sifted

    Recipe



    1. Preheat the oven to 400°F
    2. Brush the pizza base with very little almond or olive oil and place onto a baking tray.
    3. In a bowl, mix the crushed biscuits, sugar, chopped Californian Almonds, rolled oats, cinnamon, butter and egg well.
    4. Spread the ricotta cheese over the pizza base then arrange the peach slices decoratively. Spoon the biscuit topping evenly over the peaches.
    5. Bake for 10-12 minutes or until golden brown and the topping has set.
    6. Meanwhile, blend all the ingredients together for the Sweet Mascarpone Cream. Serve the pizza hot in wedges with the cream and decorate with mint leaves.
