Prune Plum Upside-down Cake

Preheat oven to 350F
Melt in a 9-inch square or deep 9-inch round cake pan 3 tbsp. butter or margarine
Stir in 1/3 C lightly packed brown sugar
Arrange attractively 12 halved and pitted prune plums (or fresh fruit of your choice) cut side down (or enough to cover pan)
Sift together in large mixer bowl
1-1/2 C Potato flour
2-3/4 tsp. baking powder
1/2tsp. salt
1 C granulated sugar
Add
1/3 C shortening
1/2 C milk or soy milk (or more as needed) (potato flour REALLY soaks up moisture. Keep adding milk until you can mix the dough) Beat for 1 minute at low speed on electric mixer or 150 strokes by hand
Add
1/4 C Milk
2 eggs
Beat for 2 additional minutes at low speed.
Pour batter into prepared pan and bake for 40-45 minutes, or until cake springs back with lightly touched.
Holding over sink, immediately invert on serving plate and cool 10 minutes before removing pan. Again, beware of where you do this since the juice from the plums may drip.
Alternate: Use 19oz. can of peach or pear halves, drained in place of plums
