Grilled Cornish Game Hen recipe w Ginger

4 Cornish game hens (about 1 pound each), split in half for broiling
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons finely chopped ginger
2 tablespoons lemon juice
2 tablespoons finely chopped garlic
2 tablespoons red wine vinegar
2 tablespoons olive oil
2 tablespoons chopped coriander or parsley leaves
2 tablespoons melted butter
Recipe
Sprinkle the hens with salt and pepper and put them in a baking dish.
Blend the ginger, garlic, lemon juice, vinegar, oil and coriander together. Pour the marinade over the hens. Cover them with plastic wrap and marinate for 3 t0 4 hours in the refrigerator.
Preheat a charcoal grill.
Drain the hens and place them skin side down on the grill. When the skin is nicely browned, turn the hens and continue cooking on the other side. Baste the hens. Continue turning and basting every 5 minutes for about 15 minutes, or until the hens are done. Serve with melted butter brushed over the hens.
Serves four.
