Spinach Salad

Recipe Introduction
Easy and delicious. This goes well with the leg of lamb recipe posted here.
List of Ingredients
1 lb. Washed and dried young spinach (stems removed)
2 tsp. Grated onion
1 tsp. Salt (scant)
½ tsp. Freshly ground pepper
2 tsp. Prepared mustard (either French or American or a mixture)
2 tbsp. Wine vinegar
8 tbsp. Oil – olive, vegetable or a mixture of both (to your taste)
½ tsp. Lemon Juice
1 tin Mandarin oranges (juice removed)
Red onion rings (very thinly sliced)
Recipe
Grate onion into bowl and mix into it salt, pepper and mustard. Moisten this with vinegar. Then, with a wire whisk or a fork, beat into it gradually oil. Continue to beat until the dressing reaches the consistency of a light mayonnaise. Stir into this the lemon juice and pour over the chilled spinach. Toss thoroughly, decorate with Mandarin sections and very thinly sliced red onion rings, serve.
