    Recipe Introduction

    Tabbouleh is just fresh and delicious. You can use this also as an appetizer - just hollow out some Campari tomatoes (or any kind of small/flavourful tomato) and/or hollowed out chunks of cucumber or zucchini and a spoonful of tabbouleh

    List of Ingredients

    1 cup (250 mL) vegetable broth
    2/3 cup (160 mL) whole-wheat couscous
    1/4 cup (60 mL) chopped Spanish onion
    1 cup (250 mL) diced tomatoes
    1 cup (250 mL) chopped fresh parsley
    1/4 cup (60 mL) chopped fresh mint
    1 tsp. (5 mL) chopped garlic
    2 lemons, juice only
    1/2 cup (125 mL) extra virgin olive oil
    sea salt to taste
    Freshly ground peppercorns to taste

    Recipe

    Bring broth to a boil.
    Remove from heat and pour over couscous. Cover and let stand 8 – 10 minutes.
    Stir couscous with a fork. Cool.
    Gently stir in onions, tomatoes, parsley, mint and garlic.
    Toss with lemon juice and olive oil.
    Adjust seasoning. Serve.
    Goes well with grilled sausages and vegetables
