    This is a simple but easy recipe that is good for leftover meat. You can use chicken, turkey or ham. You can substitute with whatever you happen to have in the pantry. Preheat the oven to 350 degrees

    List of Ingredients




    2 cups of bite size chicken/turkey/ham
    1 softball size onion chopped up in small pieces
    1 large can or equivalent size of tomatoes (I like to use the tomatoes that has extra ingredients like peppers)
    1 can chicken broth or 1 bullion cube with 1 cup of hot water
    1 pint of half and half or sometimes I've used Mocca Mix even used low fat
    1 dozen burrito size tortillas
    2 cups shredded cheese (I like the 4 cheese blend)

    Saute the onion in some olive oil or butter (whichever you chose) and the meat, longer if it's not cooked
    Add the chicken broth and reduce for about 10 minutes then add the tomatoes and simmer for about 10 more minutes or until the liquid is almost gone. Sometimes I add a Tbsp of cumin and or some mild salsa, depending on how much of kick you want to give it.
    Warm the tortillas just enough so they can be rolled without breaking; and sprinkle some cheese then add about 2-3 Tbsp of the meat/onion/tomato mix. Roll up and place in a baking dish. Depending on how much you make will depend on the size of the pan, just make sure it has sides to hold in the liquid. After you have used up all the meat mix in the tortillas pour the rest of the liquid all over the tortillas, sprinkle the rest of the cheese over the rolls then pour the half and half all over the rolls.
    Bake in the oven for 30 minutes and serve 1-2 per person and enjoy

    Sometimes I have made double batches, 'cause they freeze very well. After they have cooled I put 2 in a bag and freeze and it's a perfect dinner for one. You can put more in a bag or container depending on how many you are freezing for. This has lots of possibilities just use your imagination!!
