    We all love this recipe-it is such a moist, delicious cake!!! Try it, and it might become one of your family's favorite recipes, too

    List of Ingredients




    Sift and mix together:

    2 cups all-purpose flour
    2 teaspoons baking powder
    1 1/2 teaspoons baking soda
    1 teaspoon salt
    2 teaspoons ground cinnamon

    Beat in:

    1 cup granulated white sugar
    1 1/2 cups vegetable oil
    1 cup firmly packed light brown sugar
    4 large eggs

    Mix all ingredients together well.

    Add:

    2 cups grated fresh raw carrots

    Meanwhile, boil 1 cup of raisins in the liquid from one (8 1/2 oz. size) crushed pineapple. Add to the flour mixture. Then add the pineapple, 1/2 cup chopped pecans, 1 teaspoon ground allspice, 1 teaspoon ground nutmet and 1 teaspoon ground cloves. Mix together well. Pour into 3 greased and floured 9" round cake pans-or one greased and floured 13" X 9" X 2" pan. Bake at 350F for 25 to 50 minutes, depending on size of pan used-being sure to check after the first 25 minutes, using a toothpick, inserted into the center of the cake-which should come out clean. Cool completely before frosting.

    14 Karat Cream Cheese Frosting Deluxe

    Beat together:

    1/2 cup softened butter or margarine
    8 oz. package softened cream cheese
    1 teaspoon vanilla extract
    16 oz. (1 pound box) sifted powdered sugar

    Beat until smooth and creamy, adding additional milk, 1 teaspoon at a time, for spreading consistency. Frost sides and top of cake-frost centers of cakes, as well, if making a 3 layer cake. If desired, you can press finely chopped pecans into the sides and top of the frosted cake, for a pretty presentation.
