    Granny's Apple Pie

    6 cups baking apples, peeled, cored and sliced 1/2 inch thick. (2-1/2 pound)
    1/4 cup granulated sugar
    1/4 cup packed brown sugar
    1/2 tsp. ground cinnamon
    2 Tbsp. quick-cooking tapioca
    1/2 cup chopped walnuts
    1/4 cup raisins (optional)

    1 cup all-purpose flour
    1/4 cup shortening
    2/3 cup shredded extra-sharp or sharp cheddar cheese
    3 to 4 Tbsp. cold water

    1 tbsp. margarine or butter, cut into small pieces
    1 Tbsp. milk

    Butter a 9X1-1/2 inch round baking pan, set aside. In a mixing bowl combine apples, sugars, cinn. and tapioca. Stir in walnuts and raisins. Let stand at room temperature for 30 min.
    In a med. mixing bowl stir together flour and a dash of salt. Using a pastry blender cut in shortening until pea sized. Stir in cheddar cheese. Sprinkle 1 tablespoon of the water over part of the miture, gently toss with a fork. Push moistened dough to side of bowl. Repeat, using 1 tablespoon water at a time, until dough is formed. Roll dough to a 10 inch circle.
    Pour apple mixture into prepared baking pan, dot with butter. Lay crust over top, press crust to sides of pan. Brush with milk and cut 3 parallel slits in top of crust to vent.
    Bake 325 degrees 1 hour to 1-1/4 hour until top is golden in color. Cool 1 hour. To serve invert onto 12 inch plate, loosen edges. Cut into wedges and serve warm with Cinnamon Whipped Cream: In small chilled bowl combine 1 c. whipping cream, 2 tablespoons granulated sugar, and 1/2 teaspoon ground cinnamon. Beat with chilled beaters of electric mixer on med. speed until soft peaks form.
