Bright green flecks of pistachios and dried cranberries are a cheery contrast to this creamy white fudge. It takes less than 30 minutes to whip up a big batch, and it keeps well. Make sure to stock up for last-minute entertaining.

Makes 64 squares
List of Ingredients
3 (6-oz/170-g) pkgs white chocolate, about 18 squares
300 mL can sweetened condensed milk
1 cup (250 mL) dried cranberries or dried cherries
½ cup (125 mL) chopped pistachios or walnuts Recipe
1. Line bottom and sides of an 8-inch (2-L) square pan with 2 large overlapping pieces of plastic wrap, letting wrap hang over sides of pan. Coarsely chop chocolate. Place in a large microwave-safe bowl. Stir in condensed milk. Microwave, uncovered, on medium, stirring halfway through, until chocolate is almost melted, 3 to 4 minutes. Remove and stir until evenly mixed and smooth. Stir in cranberries and pistachios until evenly distributed.
2. Scrape mixture into prepared pan. Smooth top. Tap pan on counter to ensure fudge is well packed. Fold overhanging ends of plastic wrap over fudge to completely cover. Refrigerate at least overnight. Fudge will keep well, wrapped and refrigerated, up to 2 weeks. Before serving, remove from refrigerator and lift out of pan. Discard plastic wrap, then slice into small squares.
