Recipe Introduction
Here is a really good quick cobbler recipe for all those summer berries--my favorite is the Cherry Cobbler....YUMMM
List of Ingredients
The original recipe calls for blackberries but I've made it with all kinds of things, including cans of peaches and even canned pie fillings. It's very easy too.
2 cups sugar
1/3 cup butter
2 cups flour
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 cups berries
2 cups boiling water
Cream 1 cup of sugar with the butter. Add flour, baking powder, salt and milk. Pour into 9x13 pan, spread to cover bottom. Pour berries over batter in pan. Sprinkle remaining sugar over top. Pour boiling water over top of all.
Bake 50 mins in 350 degree oven.
A few things I learned:
The water has to be boiling JUST before you pour it on
If you use pie filling, omit the cup of sugar you sprinkle on top
I usually use 3 cups of berries, 2 is ok but 3 is better
This recipe sounds weird but the "crust" rises to the top, the berries become a layer under the crust and the bottom become a yummy, pudding-like layer that tastes like whatever fruit you use.

CHERRY COBBLER
---------------
1 1 lb.5 oz can cherry pie filling
1/2 cup raisens or dried cherries (we like Craizens)
1 tsp. grated orange peel
1 cup all-purpose flour
1 1/2 tsp baking poeser
1/4 cup brown sugar, packed
1/2 tsp. cinnamon
1/4 cup butter or margarine
1/2 cup chopped pecans (we don't use)
1 egg, lightly beaten
1/4 cup milk
Combine cherry pie filling, raisens and orange peel in a deep 10 inch fry pan or baking pan; heat to boiling.
Mix flour, baking powder, brown sugar and cinnamon together in a mixing bowl; cut in butter until crumbly. Stir in pecans.
Combine egg and milk; add to flour mixture and mix to moisten dry ingredients. Drop spoonfuls of dough onto hot cherry filling.
Bake in covered Dutch oven or deep fry pan over coals or in a 400* oven for 25 to 30 minutes.
