Smothered Pork Chops
6 oz pkg chicken stuffing mix (I think I would use pork)]
4 boneless pork loin chops
1 T. butter
4 medium apples, peeled and cut into wedges
1/2 c. packed brown sugar
1/4 c. water
1/4 t. salt
1/4 t. ground cinnamonRecipe
Prepare stuffing mix according to directions. Meanwhile in large skillet, cook pork chops in butter over medium heat 2-3 minutes on each side or until lightly browned. Stir in apples, brown sugar, water, and salt. Bring to boil. Reduce heat; cover and simmer for 8-10 minues or until apples are tender. Top with stuffing; sprinkle with cinnamon. Cook, uncovered over medium heat for 10-12 minutes or until meat thermometer reads 160. Yield: 4 servings
