    List of Ingredients






    6 ounces cream of coconut
    1/4 cup milk
    10 ounces mini-marshmallows
    3 cups heavy cream
    2 cups flaked coconut, divided
    10-inch baked deep dish pie crust or crumb crust

    Recipe




    Mix cream of coconut and milk. Add marshmallows and heat in microwave until marshmallows melt. Cool in fridge until it starts to set. Beat with mixer until frothy. Whip cream fairly stiff and fold in. Fold in coconut, reserving some for top. Pour into pie shell. It will mound up. Sprinkle remaining coconut, toasted if desired, on top and press in lightly. Refrigerate at least 6 hours before serving.
