Duchess Potatoes

4 medium baking potatoes
2 teaspoons Italian seasoning
1 teaspoon salt
2 tablespoons butter or margarine, melted
1/4 cup finely shredded cheddar cheese
2 tablespoons grated Parmesan cheese
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakesRecipe
With a sharp knife, slice potatoes thinly but not all the way through, leaving slices attached at the bottom.
Fan potatoes slightly. Place in an ungreased 13-in. x 9-in. x 2-in. baking dish.
Sprinkle with Italian seasoning and salt. Drizzle with butter.
Bake, uncovered, at 425° for 50 minutes. Sprinkle with cheeses and parsley; bake 10-15 minutes longer or until lightly browned.
