    I was raised on mom's corn fritters. All of the family has a memory of Grandma's corn fritters. In her later years, after she lost dad, she took over the running of the house, paying the taxes and taking care of her contributions to the Kingdom Hall. She was quite a lady, because she had nothing but her own social security check after dad died. When dad was alive, it was so much easier. They could travel which they did, to Arizona, Oklahoma, and New York City many times. They bought a home in Enid, Oklahoma where they joined us in serving where the need was great. They owned a home in Belfontaine,Ohio, where in the early 60's they spent a year helping in that territory also. In their late 60's they tackled building a home which they lived in up to their death. What I am saying is that they could do pretty much what they wanted to do, but then with dad's long illness and death, mom had to take over the bills and all on less than one-third of what they had been used to. Mother did all of her own paying of bills, etc till she was 92 years old. She died at 93. Now what has this got to do with corn fritters?? Well you can ask your mommies and daddies if they ever left Grandma's house hungry and they will tell you NEVER. Some times it was a roast chicken and the whole deal, sometimes cabbage rolls, and toward the later years when her bills must have been high, corn fritters. But she never missed a card on your anniversary, graduation or to a sick brother or sister. She kept up Grandpa's giving money to buy and build the Painesville Kingdom Hall, the World Wide Witnessing work to which she had dedicated herself since 1919, When I talk about mom serving corn fritters, I mean mom served inexpensive foods to make ends meet. It wasn't only corn fritters, but I know that there isn't one of us who hasn't needed to fall back on grandma's corn fritter recipe. So for you dear little ones who will someday have a home of your own and obligations just as your great grandmother Keckmety, here is her recipe for "cure what ails you" Corn Fritters.

    List of Ingredients




    2 C's pancake mix or Bisquick Mix
    1 egg, beaten
    1/2 can of whole corn or 1 C fresh
    Liquid from corn, just enough to make a batter.

    Recipe



    Mix ingredients and fry in hot fat (grandma used lard) and serve with syrup or with powdered sugar, OR grandma's way grape jelly!

    NOTE: make pancakes only silver dollar size. On a camping trip with about 35 of our friends and family I made these bigger and fried 85 pancakes one morning served with bacon, sausage and hash!
