    Buttermilk pancakes

    If you do not have buttermilk on hand, use the same amount of milk with a tsp of lemon in it, or i've also used the same amount of soda (7 up etc). The soda really makes the pancakes extra light and fluffy. (saw that on TV once!)

    List of Ingredients




    1 cup flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    2 tablespoons sugar
    1 egg
    1 cup buttermilk
    2 tablespoons vegetable oil

    Recipe



    Whisk dry ingredients together in a large bowl. Set aside.

    In a smaller bowl. Beat egg. Add buttermilk and oil. Mix.

    Add wet ingredients to dry ingredients. Whisk to mix well. You may
    need to add more buttermilk or regular milk if you want thinner
    pancakes.
