    1/4 C Fat (or crisco)
    3/8 C sugar
    1/2 C smoothly mashed, cooked potatoes
    1/4 C molasses
    1 C sifted flour
    1/2 tsp soda
    3/4 tsp ginger
    3/4 tsp cinnimon
    1/4 tsp salt

    Recipe



    Cream together the fat (or crisco)and sugar. Add potatoes and molasses. Sift flour, soda spices and salt together.
    Stir into first mixture of creamed sugar and fat. Drop batter by tablespoons onto greased baking sheets and flatten with a sugared flat bottomed drinking glass.

    Bake at 350 until cookies are light brown (about 15 min)
    Makes approximately 30 cookies
