2 lbs perch
1/2 C bread crumbs
4 anchovies, chopped
1 onion finely chopped
1 tsp. chopped parsley
1 Tbsp. paprika
4 Tbsp. butter
Lemon slices.
Recipe
Clean and bone the fish. Combine the bread crumbs, anchovies, onion, parsley and half of the paprika and butter. Stuff the fish with this mixture. Place in a buttered baking dish. Rub the outside of the fish with remaining butter and paprika.
Bake in moderately hot oven, 375, for about 30 minutes or until fish is tender. Garnish with Lemon.
