    1 onion, finely chopped
    2 Tbsp. butter
    2 Tbsp. flour
    1 tsp. salt
    3 C boiling water
    1 bay leaf
    1 Tbsp. vinegar
    1/2 C sour cream (optional)
    6 poached eggs
    paprika

    Recipe



    Brown the onion in butter; blend in the flour and salt. Add 1 C of water and stir until thick and smooth. Add the rest of the water, bay leaf and vinegar. Simmer until nearly boiling. (Blend in sour cream if using it). Serve in soup plates over individually poached eggs.
